I hope you are all having a wonderful April! So much change is in the air and I encourage you to be still and receive it.

This month we are talking about actualizing potential and moving from a space of our life happening to us to our life happening for us.

When I began my healing journey, my first stop in aligning myself with my potential involved healing my diet and food choices. Since then, I have developed an entirely new relationship with food. I completely enjoy it and I eat what sustains my body & being. No more counting calories or feeling guilty of my choices!!

Instead, I have aligned my choices with my needs, therefore providing myself with the nourishment I need to actualize my potential!

Every choice we make brings us closer or further away from our potential. Today, make the choice of eating for vitality.

Below I have shared a yummy treat which can be eaten for breakfast, snack or dessert.

Why this recipe encourages Your Potential

Seeds contain some of the highest forms energy and nutrients, as they represent pure potentiality.

A vital key in our overall well-being is proper functioning of our digestion and elimination systems. This recipe is full of beneficial fiber, which supports healthy detoxification.

Strawberry Vanilla Cream Chia Pudding
2-4 servings

INGREDIENTS

  • 1/4 cup organic chia seeds
  • 1 1/2 cup organic coconut milk
  • 1/2 tsp vanilla bean powder
  • 1/2 tsp organic vanilla extract
  • 2 tbsp organic maple syrup
  • 1 cup diced organic strawberries

Optional Superfood Boosts: maca powder, lucuma powder, vanilla plant protein
Optional Pink Pitaya Coconut Cream to layer, follow the frosting recipe in the link.

DIRECTIONS

In a medium sized glass bowl, combine coconut milk, chia seeds and both vanillas. Place in the refrigerator for several hours, until the chia seeds have become jelly-like and have absorbed most of the coconut milk.

Remove from refrigerator and stir in the maple syrup, to taste. Mix 3/4 cup of diced strawberries into the chia pudding (option to muddle strawberries first). Serve in a bowl, topped with strawberries or layer in a bowl; pudding and strawberries.
