Slow Cooker Coconut Chicken & Roasted Veggies


Ingredients

Slow Cooker Coconut Chicken

  • 4 boneless skinless chicken breasts
  • 3/4 C coconut milk
  • 2 T raw honey
  • 2 T liquid aminos
  • 3 garlic cloves minced
  • 1/8 tsp ground cloves
  • 1/8 tsp cayenne pepper
  • juice of 2 limes
  • minced fresh cilantro for garnish
Roasted Broccoli & Cauliflower
  • 2 C chopped broccoli
  • 2 C chopped cauliflower
  • 1/2 tsp salt1
  • 1/2 tsp Bragg’s seasoning
  • 1 melted T coconut oil

Directions

Slow Cooker Coconut Chicken

  • In a large bowl, combine coconut milk, honey, liquid aminos, minced garlic, peppers and ground cloves.
  • Lightly grease the bottom of the crockpot and place the chicken in the bottom. Pour the mixture on top and cover.
  • Cook for 4-5 hours or until chicken in cooked through. Serve chicken with cilantro.

Roasted Broccoli & Cauliflower

  • Preheat oven to 425
  • In a 9x13 pan, combine all ingredients, until broccoli and cauliflower are lightly coated in spices and oil.
  • Bake for 25-30 minutes, or until vegetables are lightly brown. Toss every 10 minutes for even cooking.
