Quinoa Breakfast Porridge

Ingredients

  • 3/4 C cooked quinoa
  • 1/2 C coconut milk (or milk alternative)
  • 1/2 C chopped walnuts or almonds
  • 3/4 C fresh blueberries or other berries
  • 1 T ground flaxseed
  • 1 tsp cinnamon
  • Honey or maple syrup to sweeten (optional)

Directions

  • Boil 1/2 cup quinoa in 1 1/4 cup water, for 20 minutes or until quinoa becomes translucent. Add water as needed
  • Combine all ingredients in a bowl, adding walnuts and blueberries last. Can be served warm or cold.
