Passion Pitaya Raw Cake Bites

Prep Notes


Raw Cake Batter

  • 1/2 C raw cashews
  • 1/2 C raw macadamia nuts
  • 1 1/2 C coconut flour
  • 1 tsp raw oats
  • 1 C unsweetened coconut flakes
  • 1/2 tsp cinnamon
  • 1 1/2 tsp organic vanilla
  • 1 T pitaya powder
  • 1/2 tsp beet root powder
  • 2 1/2 tsp melted coconut oil
  • 1/4 C organic maple syrup or raw honey
 Chocolate Sauce
  • 1/4 C raw cashew butter
  • 1/4 C coconut butter
  • 2 tsp coconut oil
  • 1 tsp vanilla
  • 1/4 - 1/2 C raw cacao powder..depending on how chocolatey you like it! :)
  • 2 T raw honey or organic maple syrup


Raw Cake Batter

  • Combine all ingredients in your vitamix or food processor. I suggest starting with the nuts, flour, oats and then slowly add the wet ingredients
  • Next place in fridge for a few minutes until it is firm enough to form in small balls
  • Place back in the fridge for about half an hour and then start to make the delish chocolate frosting!
Chocolate Sauce
  • Begin with a double broiler method which means place a bowl or a small pot ontop of a pot of boiling water. Melt the cashew butter and coconut oil until smooth consistency
  • Add in the sweetener, vanilla and cacao and stir until thin consistency
  • Remove from heat and dip cake balls into chocolate mixture one at a time with a teaspoon
  • Dip into desired topping and place on parchment paper to cool
  • ¬†When you have all of them dipped place in the freezer to harden.
