Overnight Oats

Ingredients

  • 1 C rolled oats
  • 2 C canned coconut milk
  • 2 T chia seeds
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1-2 T honey or maple syrup
  • 1/2 C chopped fresh strawberries
  • 1/2 C milk alternative
  • Zest and juice of 1/2 lemon

Directions

  • Whisk together all ingredients in a medium-sized mixing bowl. Spoon into a 2-4 jars, with a tight-fitting lid.
  • Close and refrigerate for at least 4 hours, but preferably overnight before eating
