Coconut Flour Chicken Nuggets


  • 2lbs boneless chicken
  • 1/2 - 3/4 C coconut flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground rosemary
  • 1/2 tsp ground thyme
  • 1/2 C coconut oil
  • 1/2 tsp himalayan salt


  • Cut the chicken breasts into bite-sized pieces. (I make mine about 2 inches long and an inch thick.)
  • Mix together the coconut flour, garlic powder, onion powder, paprika and salt.
  • Heat the coconut oil in a frying pan. Coat the chicken pieces with the coconut flour mixture and place them in the frying pan. Fry* until golden brown and until the center of the nuggets reaches at least 160 degrees F. 
  • Remove from pan and enjoy!
  • *Can also be baked for 25 minutes at 400F, to avoid using the coconut oil.
